You'll most likely find yourself quite fond of the Incinerate plasmid, as flinging a fireball at any hapless opponent or obstacle never really gets old. Not only does the burst of flame cause immediate damage, but the target will continue to take damage over time as their body is engulfed in flame. The plasmid is also quite useful for melting away ice that has formed on any wall, doorway, or container in Rapture.
If you're looking for some extra fiery satisfaction, use Incinerate on an oil slick or any of the explosive barrels and tanks strewn about the underwater city. The resulting inferno is perfect for a group of Splicers or an angry Big Daddy.
